Plant Based African Ground Nut Stew (Vegan African Peanut Curry)

Peanut Stew is something I’ve been wanting to make for a long time because it’s so delicious and satisfying. I was perusing online for inspiration and came across One Pot African Stew from MakingThymeForHealth and used that as the basis for my version.

Once you try it I think you’ll agree that it’s incredibly delicious and maybe even inspiration to use as a base recipe for other veggies. I can see white potatoes, zucchini, winter squash, bell peppers and carrots going well with this too. It is ready in about an hour over the stove, or you can try using a crockpot and cooking it slowly while you’re away from work.

Another note: Personally I’m not a fan of super spicy food or jalapeños so I omitted them. If you really love jalapeños then please add them as your heart desires. 🙂

Plant Based African Ground Nut Stew

Ingredients:

1 large onion, diced
5 cloves of garlic, minced
3-inch fresh ginger, peeled and minced
3 teaspoons of roasted ground cumin
1/4 teaspoon of cayenne pepper (or more to taste)
3 tablespoons of tomato paste
1 large yam/sweet potato, peeled and diced into small cubes (1 lb)
3/4 cup of smooth peanut butter (look for low sodium and sugar free)
4 cups of low sodium vegetable broth (plus more for cooking or use water)
1-2 cups of water, depending on desired thickness
1 bunch of kale/collards/spinach*, stems removed and chopped into bite sized pieces
1/2-3/4 tsp Herbamare or Salt (Less if using salted broth or salted peanut butter)
Fresh ground pepper to taste

To Serve:
3 cups cooked brown rice
roasted peanuts, broken into pieces (optional)
1 bunch of fresh cilantro, chopped
2 limes, cut into wedges

Directions:

  1. Add water or vegetable broth to a large pot and heat over medium. Add the onions and spices and cook until the onions are translucent, about 5 minutes.
  2. Stir in the tomato paste, yam/sweet potato, peanut butter, broth and water until well combined and bring to a boil.
  3. Reduce the heat to medium low and cover for about 15 minutes. If using collards, add them now and continue cooking another 15 minutes. If using spinach or kale add them when the yams/sweet potatoes are fork tender (after about 25 minutes) and let cook only a few more minutes.
  4. Using a potato masher or ladle, crush some of the yam/sweet potato up and thicken the broth. Cook for another few minutes until creamy.
  5. Serve over brown rice and garnish with peanuts, fresh cilantro and lime juice.

(I cook my rice in a Zojirushi rice cooker)

Slow Cooker – Plant Based Chickpea, Potato, Pea Coconut Curry (Vegan and Dairy Free)

Hey everyone!

Today I have a new recipe for you that I threw together from what I had in the fridge and cupboard as I was craving a warm curry with the cool weather we’re having in Toronto right now. This is one you can make in your slow cooker (I have a Ninja cooking system which can do a few more fancy things than a regular slow cooker) or on the stove if you have time to watch it.

As always it’s oil free and I used dried chickpeas and soaked them overnight before tossing them in the slow cooker. You can use drained canned chickpeas if you like, but be sure to read the label and see if you can find some that are oil free and low in salt if you’re looking for a healthier option. Another note if you’re looking to avoid BPA in canned goods, select ones that say BPA free or that have a metal as opposed to a white plastic lining on the inside of the can (Eden Organics for beans and Muir Glen Organics for tomatoes for example).



This slow cooker curry can either be made the night before and to have it ready in the morning to pack up for lunch or you can start it on a weekend and have a few nights of meals for the next week. For those looking for a meal within the hour you can either use canned chickpeas or pressure cook dried/soaked chickpeas in a pressure cooker and then toss everything else in a large pot and cook over the stove until the potatoes are tender.

I happened to have some sweet potatoes and white potatoes that were getting a little bit soft and salvaged them with this curry, I also love chickpeas in any kind of curry and added the peas for some color and a nice tasty pop. You could also use other root vegetables on hand, or peppers or eggplant to change it up instead of potatoes or chickpeas. If you’re looking for an even lower fat version you can skip the coconut milk altogether or add a touch of almost milk instead if desired.

Plant Based Creamy Chickpea Potato Pea Coconut Slow Cooker Curry

Ingredients:
3 15oz/425g cans of chickpeas drained and rinsed or 3-4 cups of dried chickpeas, previously soaked and drained
3 large potatoes, peeled and diced
1-2 sweet potatoes, peeled and diced (optional)
2 large 28oz/793g cans of diced tomatoes
1 15oz can low fat coconut milk
3” of ginger, peeled and minced
8 garlic cloves, minced
1 large onion, diced
2 tsp roasted ground cumin
2 tsp roasted ground coriander
1 tsp turmeric
2 tsp garam masala (Garam masala means hot spices and can vary in flavour in different regions)
1/2 tsp chili
1-2 tsp salt (or to taste)
Ground pepper to taste

Add after cooking:
2 cups frozen sweet peas
1 bunch of fresh cilantro, chopped for garnish

Slow Cooker Instructions:

  1. Layer the ingredients from first to last in your slow cooker so the chickpeas are on the bottom and the spices are on top. You can give it a little stir lightly to get the tomatoes and coconut milk down into the cracks if you want.
  2. Set the slow cooker for 4 hours on high or 6-8 hours on low.
  3. When the potatoes are tender, stir the pot and add in the frozen peas and let sit for a few minutes to warm through.
  4. Adjust for taste if you need more salt, pepper or chilli if desired.
  5. Serve with white or brown basmati rice or flat bread and garnish with cilantro. (I cook my rice in a Zojirushi rice cooker)




Stove Top Instructions:

*If using soaked dried chickpeas you can either pressure cook or stove top cook them beforehand if you want to make this recipe faster, or else you may need to cook this for an hour or two on medium low on the stove until the chickpeas are soft.

  1. Add all of the ingredients except the peas and cilantro to a large pot and bring to a boil.
  2. Reduce heat to medium and stir regularly to ensure nothing sticks to the bottom and burns.
  3. Once the chickpeas and potatoes are tender, adjust seasonings if desired and stir in the frozen peas.
  4. Heat through until the peas are warm.
  5. Service with rice or flat bread and garnish with cilantro.

Our Thanksgiving is already long gone in Canada, but I saved this post for my American readers as many of you have a hard time deciding on what to make and spend a lot of time worrying if your guests or family can survive a meal without turkey or ham on a big holiday. Lol. Well never fear I can help give you some ideas for  filling out your plant based Thanksgiving menu with ease.

I make everything from scratch and find that whipping up mashed potatoes and mashed yams/sweet potatoes an absolute BREEZE in my pressure cooker. I actually have 2 now, one is an EZ Bean Cooker pressure cooker that I can set manually for cooking anything else other than beans as well, so I fill one with potatoes, one with yams and then I don’t have to sacrifice stove top space and watch the pot. This is a huge time saver and I use my pressure cooker every holiday to makes my potato recipes.

A few things I’ll mention, I actually forgot about making stuffing this year as I focus more on making my lentil loaf recipe, stuffed peppers and mashed potatoes. No one seemed to mind though and having an alternative side of Greek Stuffed Peppers was actually a healthier option than traditional stuffing.   The other thing is that I ran out of pecans and didn’t have any for my mashed yams but they were still delicious none-the-less. I also just realized that this Thanksgiving dinner was essentially gluten-free as well so everyone with dietary restrictions can enjoy it! And best of all we had so much leftovers for the rest of the week it was SO nice not having to cook each day. (As my lentil loaf recipe makes 2 loaves and I made a double batch of gravy!)

 

Here are my favorite veganized Thanksgiving dishes to share with you since many of you will be dining plant based or trying to dine mostly plant based this year and still feeding some carnivores too! All of these recipes have been tested on my family and their non vegan friends, so I assure you they are crowd pleasers. 🙂

Gluten Free Vegan Yam Black Bean Burgers (Adapted From TheGlutenFreeVegan.com)

Here we go with another yam recipe! Ahem… “sweet potato” if you are in the states and kumara if you are in Australia. This recipe is an adaptation of fellow blogger Megan Lust whom I met at the International Food Blogger conference in Portland, Oregon last August.

Funny story, so we sort of found each other with a few other vegan bloggers (there weren’t many!) and bonded over the lack of vegan food at the conference and being pretty hungry. We hung out and then after we saw each others’s business cards we were like hey you sound familiar…. I found out we’ were both Canadian and she was from Saskatoon. Then I thought odd… I swear I know a gluten free vegan in Saskatoon.

And we find out we had actually been vegan food swap buddies a few months before. We tried it out this Canada blogger vegan food swap for 2 months when it first started before giving up (because too many people were sending prepackaged vegan junk you could easily get at the store.) But the cool thing was she had lovingly made me some HOMEMADE ginger pear jam because I begged to not be sent anything junkie with oil and said anything else would be awesome. Here is my previous blog post about the lovely things she sent me.

Faster forward to a few months later and the other day I was cruising her website The Gluten Free Vegan and saw these yummy homemade “sweet potato” burgers. (We Canadians use that word online generally so Americans know what we’re talking about! and most of our blog traffic comes from the USA and not Canada) and I decided to make them myself.

I wanted to try these. I JUST HAD TO.

So in my version of course I stripped the oil out of it and tried to make it lower fat, and also changed up the seasonings to it as well. If you like smokey black bean yam burgers that have a South Western taste you’re going to love these!

These vegan patties also stay together really well because Megan (the genius that she is) uses spiralized or shredded yam pieces in the patty to help it stay together without needing breadcrumbs which makes for a tasty gluten free vegan yam burger! (Much tastier than my previous attempt of yams with black beans and breadcrumbs, that recipe has never seen the light of day because it just wasn’t delicious enough lol.)

You end up with a delicious and crispy on the outside moist in the middle veggie patty that is perfect to serve between burger buns, or even set it atop of some rice or pilaff. So check it out!

Gluten Free Yam Potato Black Bean Burgers

Adapted from Megan Lust’s recipe at The Gluten Free Vegan

Makes 6-8 patties

Ingredients:

2 1/2 cups grated or spiralized yams/sweet potato (about 2 small ones)
1 19 oz.(large) can low sodium black beans, drained and rinsed well
6 green onions/scallions/spring onions, chopped
1 carrot, peeled and chopped
1 stalk celery, chopped
6 cloves garlic
3/4 cup walnut pieces
1 tsp smoked paprika
1/4-1/2 tsp chipotle chili powder
¼ teaspoon salt
½ teaspoon ground pepper

Instructions:

1. Preheat oven to 400°F/205°C.
2. Line a baking sheet with parchment paper.
3. Add walnuts to the bowl of your food processor and pulse until finely ground.
4. Add in the carrot, celery, green onions and garlic and pulse to finely chop. Be careful not to let it become a paste. Remove contents and set aside in a bowl.
5. Add in the black beans to the food processor and gently pulse until chopped. Add 1 1/2 cups of the grated yams and pulse into a chunky puree. Scrape out into same bowl.
6. Add the remaining 1 cup  of grated yams and seasonings. Stir and combine well.
7. Form into 8 patties with your hands and place on the parchment-lined baking sheet.
8. Bake for 25 minutes until lightly browned and set.
9. Garnish with condiments and serve as desired. (I use hummus instead of Veganaise, ketchup and relish or pickles and lettuce.)

Additional Tips:

If you don’t have smoked paprika or chipotle pepper, I recommend it, but you can use regular. It just won’t have that full bodied smokey flavor to it.

For a gluten free option, serve patties in a large lettuce leaf or use gluten free buns.

Additionally you can serve these like sweet potato cakes over top of rice.

Store remaining patties in between sheets of parchment paper, either in the fridge or seal and place in freezer. To reheat, place into a non stick pan and heat over medium heat until warmed through.

Vegan Soy Curl Fajitas With Yams (Sweet Potatoes)

I don’t often use “fake meat” substitutes and prefer to make almost everything from scratch.  But my favourite “just like chicken” product is Soy Curls because they do have a great taste and texture once they are seasoned.  They don’t contain a lot of ingredients, just soy and they are gluten free (and GMO free as well).

So far everything I have put Soy Curls in has turned out delicious. You really can’t screw up Soy Curls.  Essentially you take the dried product and soak it in warm/hot water for about 10 minutes to plump up and you drain them.  I like to add some salt and seasonings to them while they soak, or else they don’t taste like anything. They do need some salt to have flavor.

Then you can just sauté these dry in a pan (they taste better if you cook some of the water out) I cook them for 10-15 minutes until they seem done and have a good texture. You can then add the Soy Curls to any recipe you desire, but they taste best if you season them or put a sauce over them. See my previous Soy Curl recipe here that is one of my favorites.

If you don’t want to buy Soy Curls you can omit them and just use the veggies and yams in this recipe instead.

It’s also really hard to make fajitas look appetizing when you have so many brown/beige colours with the whole wheat tortillas, mushrooms, onions and Soy Curls! At least my new colorful plates help…

Vegan Soy Curl Fajitas With Mashed Yams (Sweet Potatoes)

Serves 4

Ingredients:

3 small yams (orange sweet potatoes/kumara)
Roasted cumin (I use McCormick’s) to taste
Herbamare or Sea salt to taste
Chipotle chili powder or chili powder to taste
1 1/2 cups Soy Curls (dried)
1 sweet onion, sliced
2 bell peppers, sliced
1 cup mushrooms slices
9-12 small corn or small wheat tortillas
1-2 tbsp fajita seasoning (recipe found here)

Directions:

Peel and slice the yams. Place in a pot or steamer basket and steam until fork tender. 15-20 minutes depending on size. Set aside when done.

Soak the Soy Curls in warm/hot water for 10 minutes. Season with some salt if desired (I do). Drain.

In a large non-stick skillet or wok saute the Soy Curls over medium heat for about 10 minutes. Add the mushrooms and saute for another 2-3 minutes. Add the onions and peppers and season to taste with fajita seasoning. Cook until peppers and onions are at desired tenderness (about 1-3 minutes).

Place the yams in a bowl and mash them and season to taste with cumin, salt and chipotle powder. (Don’t over season, just give it a little flavour.)

Lay out a tortilla, spread some mashed yams and add the fajita ingredients.

Serve with guacamole or salsa if desired.

Repeat with remaining tortillas.

Additional Tips:

For warm tortillas you can microwave them for a few seconds until warm or heat them in an oven wrapped in tinfoil on low while you prepare your ingredients.

Feel free to add other veggies as desired like zucchini or carrots. Cook longer if necessary.

Soy Curls can be cooked a lot without burning because they are so moist so keep cooking them until your vegetables are at desired tenderness.

Easy Vegan Rainbow Bowl: Steamed Veggies Over Yams & Squash With Peanut Dressing

Low Fat Vegan Chef's Vegan Rainbow Steamed Veggie Bowl With Peanut Sauce

I wanted to have a quick and healthy lunch yesterday, but I did not have any rice ready. So instead I decided to serve my veggies over some delicious steamed yams (sweet potatoes) and Kobocha Squash (Thai/Japanese pumpkin). It’s kind of Macrobiotic, it just doesn’t have rice, beans, or fermented veggies. I guess it’s like a lazy version of a Macrobiotic dish instead.

This is a nutritious and easy way to get a lot of veggies all into one dish. I’ve got broccoli, cauliflower, carrots, asparagus, yams (sweet potatoes) and squash, topped with a light peanut dressing to give it some nice flavour.

Basically my Rainbow Veggie Bowl is like a vegetable stir fry, but with steamed vegetables and nothing is fried! This is an easy meal idea for you when you’re not sure what to make, but just want something that still tastes good while being healthy at the same time. It’s also really easy to use up extra vegetables in the fridge, or use a whole bag of fresh mixed vegetables like I did and then they’re already washed and chopped for you.

You can also make the peanut dressing in advance and then use it throughout the week if you want to make this even quicker.

Steamed Yams (Sweet Potatoes) Kobocha Squash

This is the steamed yams and squash before I topped it with the veggies.

Low Fat Vegan Chef's Vegan Rainbow Steamed Veggie Bowl With Peanut Sauce

Veronica’s Easy Rainbow Veggie Bowl

Serves 2

Ingredients:

1 large yam/sweet potato, peeled and chopped
1 small Kabocha squash, peeled and chopped (Thai/Japanese pumpkin) or 2-3 cups frozen butternut squash cubes
1 12 oz./340 g mixed vegetables (I used broccoli, cauliflower and baby carrots)
1/2 bunch asparagus, ends trimmed and cut in half (or other vegetables as desired)
1/2 recipe of Thin Peanut Dressing (see recipe below)

Directions:

  1. Steam yams/sweet potatoes and squash in a medium-large pot in a steamer basket (if you have one) just until tender.
  2. When yams and squash are starting to cook, place other vegetables into another pot with a steamer basket (if you have one) and steam just until cooked. Be sure to check on them so that the broccoli doesn’t fall apart.
  3. Arrange steamed yams and squash into bowls and top with steamed vegetables. Drizzle with thin peanut dressing and serve!

Variations:

Use any other vegetables you desire instead of the asparagus, broccoli, cauliflower or carrots. You can also use ones like kale, Swiss chard, collard greens, Bok Choy, cabbage, onions, zucchini, etc.

Feel free to top your bowl with other goodies like seasoned tofu, tempeh, or black beans.

Kobacha squash can be substituted with Butternut squash, or even more yams/sweet potatoes if you like.

You can also serve with brown or white rice if you don’t want to use yams or squash.

(Oil-Free) Thin Peanut Dressing For Veggies

Serves 2-4

4 tbsp peanut butter
4 small dates, pitted or 1-2 tbsp of liquid sweetener of choice
1 clove of garlic
2 tsp light tamari or light soy sauce
2/3-3/4 cup water (to thin as desired)

Directions:

  1.  Add all ingredients to a blender and combine. Taste test and adjust seasonings if desired. Use as much or as little water as you like depending on how far you want your sauce to go.
  2. Serve over greens or steamed vegetables.

Additional Tips:

Refrigerate any leftovers for up to 3 days.

Variations:

You can also try almond butter, or tahini if you prefer instead of peanut butter. You can also add fresh ginger or a splash of apple cider vinegar if desired for different flavours.
