Plant Based Tempeh Bacon and Tofu Caesar Wraps

These tofu Caesar wraps are great for packed lunches or picnics. You can prep the ingredients the day before and combine and wrap up in the morning to take with you wherever you go.

Alternatively, you can skip the wrap and just make a big bowl of Caesar salad with the tempeh or tofu and add any other salad ingredients you like. It’s great for family dinners and barbecues too.

Even kids will enjoy the Caesar dressing to dip veggies into as an alternative to hummus!

I use a mix of nuts and seeds in the Caesar dressing to reduce some of the fat content and cashews can be expensive in some places so I only use them in small quantities. Use whatever you have if necessary. Any mild nut or seed like cashews, sunflower, sesame (or tahini paste) or pinenuts can be used.

To get some umami and fishy taste into the Caesar dressing I use a mix of miso paste and seaweed flakes/granules. The roasted garlic gives a really wonderful flavor, but in a pinch you can use raw garlic as well.

I just go these cute lunch box bentos to try out and was looking for something that could easily fit inside.

These bento box containers come with 2 sections and a lid and elastic to hold them together. I just thought they were a cute idea to carry lunches in and wanted to share them with you. You can absolutely use plastic or glass containers or use reuseable protective wrap to cover them in.

I make this dressing ahead of time so I can add it to salads or wraps as needed. You can use tempeh or tofu or both to fill out the wraps as well

Roasted Garlic Vegan Caesar Dressing 

  • 1/2 cup raw cashews (soak overnight and drain if you don’t have a high powered blender)
  • 1 bulb roasted garlic  (recipe here)
  • 4 tbsp lemon juice 
  • 2 small pitted dates (soak overnight and drain if you don’t have a high powered blender) 
  • 2 tsp miso paste (mild yellow or brown) 
  • 1 tsp dried dill
  • 3/4 tsp seaweed flakes or crushed nori flakes
  • Fresh ground pepper 
  • 2/3 cup filtered water 

Directions: 

  1. Place ingredients into a blender or food processor and blend until smooth. Add a little more water as needed. (As this is oil free it’s best that it’s thick and not too watery so it coats lettuce leaves better.)  
  2. Taste test and adjust for salt, pepper and tanginess as needed.
  3. Cover and refrigerate up to 5 days in the fridge.

Vegan Tempeh Bacon Bits

  • 1 package of plain tempeh
  • 1/3 cup soy sauce, tamari or coconut aminos
  • 2 tbsps maple syrup or sweetener of choice
  • 1 tbsp nutritional yeast
  • 3/4 tsp liquid smoke
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  1. Slice the tempeh into strips and then cut the slices into small pieces.
  2. In a container with a lid mix the marinade ingredients and add the tempeh and seal.
  3. Toss to combine and refrigerate. It’s best marinated over night or up to 3 days. At least a few hours is required to get the best results.
  4. Preheat 400F line a baking sheet with a non stick mat.
  5. Drain out extra marinade from the container.
  6. Spread out on baking sheet and bake for 12-15 minutes.
  7. Turn and bake another 3-5 minutes being sure they don’t burn.
  8. Let cool and refrigerate up to 5 days.

Vegan Caesar Wraps

Ingredients:

  • Package of large tortilla wraps
  • Caesar dressing recipe above
  • Tempeh Bacon recipe above
  • 1 block of tofu baked or marinated and sliced. I marinated the cubes in vegan “chicken broth powder” mixed with water overnight and baked at 400 degrees on my convection oven (or use air fryer) for 25-30 minutes until dry and “crispy” *Optional
  • Romaine lettuce, chopped or bagged salad of choice
  • Cherry tomatoes sliced, or cucumber, diced

Assembly Directions:

  1. In a bowl combine the salad ingredients, a few table spoons of dressing, tempeh and/or tofu together.
  2. Toss to combine and check if you need more dressing.
  3. Heat the tortilla wraps for 10-15 seconds in the microwave to soften.
  4. Assemble the wraps by adding the caesar salad mixture in the bottom 1/3 of the wrap and fold the bottom up and over the filling. Fold the sides in over the middle and continuing rolling the tortilla upward as tightly as you can without the filling breaking out.
  5. Slice the wraps if desired and serve.

Silken Tofu Tzatziki Farfalle Pasta Salad Vegan, Dairy and Oil Free

Pasta salad is such a great meal for picnics or lunches that can be made ahead of time and eaten for a few days. For today’s recipe I used farfalle (bowtie) pasta because it has a nice texture and chew when eaten cold and goes well with the size of the other chopped veggies. You might be wondering what I’ve used for the base of the plant based tzatziki sauce and instead of processed coconut/soy yogurt I’m using silken tofu.



With silken tofu it’s just soy milk that has been curdled and formed and instead of separating the soy curds from the whey they are set together so it’s softer and creamier. It also doesn’t have added fillers, binders, or sugar. Quite often you’ll find silken tofu cheaper than a tub of plant based yogurt as well. You can find it at any Asian market, most health food stores and of course on Amazon depending where you live. I like to keep a few on hand for make plant based “cream” sauces like my Fettuccini Alfredo from my cookbook Vegan Comfort Foods From Around The World.

Silken Tofu Tzatziki Farfalle Pasta Salad Vegan, Dairy and Oil Free

Of course you can use whatever other type of pasta you like for this salad as well, just make sure that it’s bite sized and cooked to the perfect tenderness so it’s not too al dente or too soft so it doesn’t fall apart. The farfalle shape works well because it doesn’t tend to get as stuck together in the fridge or break when made ahead of time for meals later on.



This also works great for traveling. I often have people asking me what they can bring on a road trip or flight besides dried snacks. Since this pasta salad is dairy and egg free you don’t have to worry about it being food safe and it will be fine out of the refrigerator for a few hours packed in a cooler or a bag. I’ve never had an issue eating pasta salad on a plane or bringing it through security. The sauce sticks to the pasta and isn’t liquid in the bottom so it’s not a concern.

So why not give it a try? Maybe you’ll find some new lunch ideas and you’ll probably want to make the silken tofu tzatziki again and again for using as a dip, salad dressing or sauce for wraps or pitas as well!

Silken Tofu Tzatziki Farfalle Pasta Salad

Ingredients:

1 recipe of Silken Tofu Tzatziki
1/2 English cucumber, chopped or a few dill pickles chopped/diced
1/2 cup packed sundried tomato halves, sliced (mine were dried not packed in oil)
1 can artichoke hearts packed in water, sliced (6 cooked artichoke hearts, sliced)
454g/1 lb bag of farfalle or other pasta (you can use gluten free if you like)
Fresh dill for garnishing (if you have any left from the Tzatziki recipe)



Directions:

        1. Make Silken Tofu Tzatziki and set aside
        2. Bring a large pot of water to a boil and add salt if desired. For cold pasta it will make it more flavourful.
        3. Prepare vegetables and set aside.
        4. Cook Farfalle for approximately 14 minutes or to desired tenderness in boiling salted water. You still want it to be a bit chewy but not tough or too soft and falling apart.
        5. Drain and rinse pasta in cold water when at desired tenderness until cool.
        6. Add farfalle pasta to a bowl and make sure it’s cooled down before adding remaining ingredients.

      Silken Tofu Tzatziki Farfalle Pasta Salad Vegan, Dairy and Oil Free

      1. Add vegetables and sauce and toss to combine.
      2. Taste test and add any additional salt or pepper now if desired
      3. Serve or portion out into containers. Best eaten within 3-4 days due to fresh ingredients in the tzatziki sauce.

Creamy Vegan and Plant-Based Avocado Dill Potato Salad

Plant Based Avocado Dill Potato Salad Vegan Oil Free

Sometimes you get a craving for a creamy salad, especially potato salad – but how do you make it creamy, oil-free and whole food based at the same time? Simple! I switch out the vegan mayo (not a condiment I use in my kitchen!) and substitute a fresh ripe avocado and mash it up and season my plant-based potato salad it just like I would any other.



Except that my version is ultimately tastier than what you’re probably used to. I like to give it more kick and I up the seasonings in it so it’s truly a dish you can enjoy on it’s own or pair with a light soup or wrap. This recipe is also oil free, soy free, gluten free and nut free as well so it’s great for allergy friendly households.

So get ready to try the best whole foods potato salad you’ve never had! And please tell me how much you enjoyed it once you have 🙂

Vegan/Plant-Based Avocado Dill Potato Salad

Serves 4-6 side servings

Ingredients:

2 lbs/908 g small baby red skinned potatoes (or other potato of choice)
3 stalks celery, trimmed and sliced
1/2 white onion sliced and diced
1 Large ripe avocado (should be soft and give to pressure)
2 tsp lemon juice
1 1/2 tsp honey, maple syrup or liquid sweetener *optional to balance the acidity in the lemon and spiciness in the mustard
1 tbsp dijon mustard
1/4 tsp smoked paprika
1/2 teaspoon herbamare or salt *or to taste as desired
Freshly ground black pepper to taste
1/3 cup dill, packed and then chopped
1/2 bunch green onions/spring onions, sliced (top green parts only)

Directions:

1. Wash potatoes and cut out any bad spots or eyes.
2. Steam, or pressure cook the potatoes gently until they are just fork tender through the centre, but al dente. Immediately run the potatoes under cold water to prevent them from cooking further.
3. For best results, refrigerate cooked potatoes for about an hour until cool. (This ensures they don’t fall apart when slicing)
4. Quarter the potatoes and peel if desired.
5. Peel and mash the avocado in a small bowl. Add lemon juice, and seasonings (except fresh herbs) and stir into avocado to create a dressing.
6. Turn potatoes into a large bowl. Add the fresh herbs and avocado dressing. Toss gently until everything is coated. Taste test and adjust seasonings if desired.
7. Serve or refrigerate until needed. Best consumed same day, or next day (as the avocado changes color and breaks down quickly)

Low Fat Vegan Chef's Kale Mandarin Orange Goji Berry Salad with Citrus Ginger Cashew Dressing

Have you ever had a craving for a deeply satisfying and hearty kale salad? But you don’t want just a big pile of kale…. no you want all sorts of yummy textures and flavors in your kale salad to keep things interesting.

This is that salad.

It’s perfect for a dinner entree, a potluck, or a weekday take along for lunch. I like to make up big salads and then keep the dressing on the side that way I can have as much or as little dressing as I like and save any remaining salad in a sealed container in the fridge.



Low Fat Vegan Chef's Kale Mandarin Orange Goji Berry Salad with Citrus Ginger Cashew Dressing

Most kale salad recipes are heavily dressed with oil and salt and I find it hard to stomach. I want to taste my greens and not the oil so I paired this with a delicious homemade citrus ginger cashew dressing. It has some natural sweetness and creaminess from the cashews and is super easy to whip up in the blender with some fresh ginger and orange juice. Fresh squeezed orange juice is a great choice for liquid in salad dressings because it has some natural sweetness, and acidity and you can toss almost any fruits or veggies and/or nuts and seeds into it and blend it up.



So make up a big bowl of this hearty kale salad and you’ll have a light yet satisfying entree salad for 3-4 or a delicious side salad to serve along with baked potatoes, rice pilaff, pasta marinara and more. Enjoy!

Low Fat Vegan Chef's Kale Mandarin Orange Goji Berry Salad with Citrus Ginger Cashew Dressing

Raw(ish) Vegan Kale, Mandarin Orange and Goji Berry Salad

Serves 6-8 side servings

Ingredients:

1 head of kale, stems removed and chopped
1 head of romaine, chopped
3 cups loose packed spinach
1 english cucumber, sliced
4-5 mandarin oranges, peeled and sectioned
3 tbsp goji berries soaked and patted dry
2 cups cooked quinoa (I seasoned mine with vegetable broth) *can omit if you desire a 100% raw dish

Directions: 

1. Arrange salad greens in a large bowl and mix together.
2. Garnish with remaining ingredients.
3. Serve with dressing on the side, or toss dressing with salad for a marinated salad.

Raw Vegan Citrus Ginger Cashew Dressing

 Ingredients:

1 cup fresh squeezed clementine or sweet mandarin juice
2 medjool dates, pitted
1 tbsp Spicy Pecan Vinegar (or other fruit vinegar)
1 tbsp fresh ginger, minced
1/2 cup raw cashews (unsalted)
Dash of salt and pepper *optional

 Directions:

1. Blend dressing ingredients together. Best used within 3 days (due to fresh orange juice which is perishable).

Additional Tips:

If you prefer to make this your weekday lunch salad for 5 days a week, arrange the salad in 5 sealable containers and store the dressing in small airtight containers.

Shaved Asparagus and Spring Vegetable Salad With Basil, Mandarins and Pine nuts

I have to tell you… I am totally loving my new (but used) camera I just got! As you can see, I have some more delicious photos  to share with you. This is a shaved asparagus salad I’ve been wanting to try for a while and I just happened to have asparagus in the fridge this week so I was very excited! I’ve had many many raw dishes using shaved or spiralized zucchini (summer squash) and the asparagus can be shaved with a vegetable peeler in the same way.

This shaved spring vegetable salad is absolutely delicious and will definitely shake up your boring entree or side salad routine. You can even make this salad go even farther by incorporating baby spinach or mixed greens to make it lighter and less “noodley”.

You’ll be surprised how delicious shaved raw asparagus is, it’s quite mild and has a nice flavor to it. There’s no cooking required when you shave vegetables this thin, just like shaved or shredded beets or carrots it’s quite easy to eat.

I also added some fresh basil and red onion to kick up the flavors and am definitely going to add basil to more of my salads. It’s just wonderful! Even better if you pick it fresh from the garden. 🙂

I know you’re going to love this shaved asparagus salad as much as I did, so let’s check out the recipe!

Shaved Asparagus and Spring Vegetable Salad with Basil, Mandarins and Pine nuts

Serves 2 entrees or 4 side salads

Ingredients:

1 lb asparagus
3 small/medium zucchini
1/2 red onion
2 handfuls of fresh basil (60g)
2 mandarins, peeled or sliced and sectioned
2 tbsp pine nuts
2 cups baby spinach/spring mix *optional

Dressing:
1 cup fresh mandarin orange juice (about 5 mandarins)
1 tbsp champagne vinegar
1/4 cup pine nuts
1-2 medjool dates, pitted and chopped
5 medium fresh basil leaves
pinch of salt
dash fresh ground pepper

Directions:

Optional: toast pine nuts dry in a non stick pan over medium low heat until golden brown and set aside.

1. Hold the stem of each asparagus and lay it down on a cutting board. Shave thin ribbons of asparagus by using a vegetable peeler. (Use a sharp one! Dull ones will make this difficult.) Add tops and ribbons of asparagus to a bowl.

2. Do the same to the zucchini, lay flat on a cutting board and shave into ribbons using a vegetable peeler. Rotate zucchini to a new side once you reach the inner seeded section. Peel until all 4 sides are done. Add to bowl.

3. Slice red onion into thin slivers. Add to bowl.

4. De-stem the basil and slice into thin strips. Add to bowl.

5. Peel or slice off skin of mandarins and add mandarin sections and pine nuts to bowl.

6. Prepare dressing: combine orange juice, vinegar, pine nuts and dates in a blender and blend until smooth.

7. Pour dressing over salad ingredients and toss to combine. Refrigerate before serving if desired.

8. Serve as is, or atop baby spinach or mixed greens in bowls or plates.

Enjoy!

Variations:

If you can’t find champagne vinegar use another fruit vinegar of choice.

If asparagus is out of season, too expensive, or too time consuming to shave you can substitute more zucchini (about 3-4 more). You can use yellow and green zucchini/squash for variety.

If you can’t find pine nuts you can try pumpkin seeds or sunflower seeds and toast them if desired.

Plant Based Avocado Dill Potato Salad Vegan Oil Free

Now that it’s Spring and some of us are thinking about barbecuing, picnics and potlucks, I thought it was the perfect time to dig out this recipe I haven’t yet shared with you. It’s a delicious twist on potato salad using avocados instead of mayonnaise. I’m sure many of you have loved potato salad and often enjoyed it in the summer with your families. But traditional potato salads are really rich and not very healthy because of the mayonnaise and sometimes eggs they contain.

This version of potato salad is much better for you and is packed full of flavour. I particularly love the addition of celery and dill to this potato salad recipe. In fact, I’m sure it will become a family favorite and you’ll no longer crave the store bought kind.

I like to use baby red skinned potatoes for this, but you can use whatever waxy potatoes you like. Leave them skinned, or peel them your choice! Since mashed avocado is perishable you’ll want to eat this recipe the same day or the next day for best results. Enjoy!

Sweet and Savory Asian Salad with Orange Sesame Dressing

Often when I make salads at home I toss whatever I have in the fridge into a bowl and make a homemade dressing for it. This is a giant salad I made one night for dinner and it was so filling I didn’t need anything else! But I kept it lower fat by not adding anymore nuts or avocado to it and added chickpeas instead for calories and protein.

I also like to add apples and dried fruit to salads to give them more flavor and calories as opposed to lots of nuts or seeds. Salads can be much more appetizing when you make a fresh homemade dressing. Store bought dressings often contain a lot of junk and it’s super easy to make your own at home. I usually make my dressing recipes up as I go along and season them to taste. This one is no exception and I think you’ll like it!

Sweet and Savory Salad Ingredients:

6-8 cups of salad greens like spring mix, or baby greens
2 apples, peeled and diced
1 15 oz. can of chickpeas, drained and rinsed
1 cup of sugar snap peas
1/2 English cucumber, sliced
1 cup cherry tomatoes, sliced *optional
2 tbsp dried cranberries

Orange Sesame Dressing Ingredients:

4 tbsp tahini (sesame seed butter)
2 tbsp orange vinegar (or other fruit vinegar)
8 dates, pitted and chopped
1/3-1/2 cup water (as needed for consistency)
Dash of salt

Directions:

1. Arrange salad ingredients into a large bowl.
2. Combine dressing ingredients in a blender or VitaMix and blend until smooth.
3. Serve and drizzle with dressing.

Additional Tips:

Use dressing within 3-4 days and store any leftovers in an airtight container in the fridge.

Mix up your dressings by purchasing a few different types of fruit vinegars. Trader Joe’s makes a few varieties and so does Dr. Fuhrman (sold on his website). Having a little variety makes creating different tasting dressings so easy.

Pomegranate Apple Green Salad With Raspberry Walnut Vinaigrette

The other day I went to a raw food potluck in Calgary and someone made this delicious salad that had a bunch of mixed vegetables and pomegranate seeds and it was quite delicious. So I thought why not make my own pomegranate salad for the holiday season?

To easily peel a pomegranate, you can cut it in half and fill a large bowl or sink full of water. Start peeling off the outer peel. The seeds will sink and the white parts will float so you can scoop them out and discard them. Once you’re done peeling everything apart you can drain the water and you’re left with pomegranate seeds.

(Or you can go to Costco and buy packages of fresh pre peeled pomegranate seeds in the refrigerated produce section if you don’t want to peel one.)

This is a really lovely salad that I designed to be really simple to make yet seem a little fancier. It’s got antioxidants from the pomegranate and the raspberries and omega 3’s from the walnuts (in the dressing).

I prefer to make all of my own salad dressings and not use any oil in them at all. So I used walnut pieces for healthy fats in this dressing. If you don’t have fresh raspberries right now, you can also use frozen. Just let them sit out for a few minutes to defrost a little first.

So let’s check out the recipe:

Raw Vegan Pomegranate Apple Green Salad

(With Raspberry Walnut Vinaigrette)

Serves 2 side salads or 1 medium/large salad

Salad:

4-6 cups mixed greens
1-2 apples peeled and sliced
1-2 tbsp raw pumpkin seeds (pepitas)
3 tbsp fresh pomegranate seeds

Raspberry Walnut Vinaigrette

Ingredients:

1/2 cup raspberries (fresh or frozen)
1/4 cup mandarin orange juice (2 oranges)
1/4 cup water
2 tbsp broken walnut pieces
2 large medjool dates, pitted
1 tbsp Trader Joe’s orange muscat champagne vinegar/other fruit vinegar/apple cider vinegar
1/8 tsp Herbamare or salt *optional

Directions:

  1. Arrange the salad ingredients in side salad bowls or a large serving bowl.
  2. Place the salad dressing ingredients into a Vita-Mix or a blender and process until smooth.
  3. Drizzle dressing overtop of salad.
  4. Serve.

Additional Tips:

Feel free to double this recipe if you’re entertaining.

Super Protein Packed Spinach Salad With Quinoa, Chickpeas and Creamy Orange Hemp Seed Dressing

I think it’s time for more salads. Yes, sometimes you can get tired of the same old ones, so I wanted to create a better recipe that was all around tasty, just like you’d find at a vegetarian restaurant.

All salads are not created equal of course… sometimes you just eat one because they’re good for you and you feel you’re “supposed to”. Other times you might have a delicious and gourmet salad at a restaurant, but it’s not really on the healthy side as it’s loaded with things like feta cheese, creamy dressing, bacon, battered chicken strips etc. If you’re vegan you may have a love/hate relationship with eating salads at restaurants.  Sometimes they are ok but often they don’t have many ingredients in them so you can have a rather small meal and let’s face it vegan salad dressing options at restaurants flat out SUCK.



Never fear, I am here to bring to you…

THE ONE SPINACH SALAD TO RULE THEM ALL!

This salad is so good that you will actually crave more of it… You might even gets your kids or husband begging for it regularly. In fact I would bet that any vegetarian restaurant would be thrilled to have my super spinach salad on their menu.

What’s the secret to an amazing salad? Well several things, first picking delicious ready-to-go  ingredients that go well together, second that are healthy and lastly and more importantly are satisfying and filling but without all the guilt! (And it doesn’t hurt to top this salad off with my killer Creamy Orange Hemp Seed Dressing either).

I am NOT a fan of store bought dressing. In fact I despise it. If you’re in North America like I am you know there is often an ENTIRE wall of salad dressings at the grocery store. And yet still picking out a dressing that is tasty, healthy and you don’t get tired of is really hard.

Could it be that your taste buds are smart enough to know your body shouldn’t be consuming the same oily, vinegary, high fructose corn syrupy dressing all the time?



That may well be… Even just reading the ingredients in most salad dressings is enough to make me want to gag. Where’s the real ingredients and real flavour?

Well your salad dressing problem is solved! I guarantee that you’re going to love this protein packed spinach salad. I know it’s definitely going into my weekly lunch menu for myself. And my Creamy Orange Hemp Dressing is very delicious and will complement it perfectly.

BTW did I mention the dressing is also completely oil free? (Your pants should be rejoicing right now!)

Eat To Live fans will be happy to know that this is a Dr. Fuhrman style salad packed with nutrient dense ingredients that will curb your appetite and stimulate weight-loss as well.



Let there be salad:

Super Protein Packed Spinach Salad With Quinoa, Chickpeas, Tempeh and Cranberries

Serves 1

Ingredients:

2-3 cups packed baby spinach
1/4 cup cooked quinoa (see my post here on how to cook quinoa)
1/3 cup cooked chickpeas (I used Eden Organics)
2 strips of cooked tempeh (I used Sesame Garlic Marinated Tempeh) or smoked tofu (optional)
1/4 cup shredded carrot (store bought is fine)
1 tbsp dried cranberries (I used apple juice sweetened ones)
small handful of micro greens or sprouts

Directions:

Arrange salad ingredients into a large bowl and garnish with micro greens or sprouts as desired. Top with dressing.



Raw Vegan Creamy Orange Hemp Heart Dressing:

Serves 2

Ingredients:

1/3 cup fresh orange juice from 1 medium orange (use sweet oranges)
1 1/4 tsp apple cider vinegar
2 1/2 tbsp hemp hearts/seeds (sub sesame or tahini if you can’t find)
1 tsp fresh ginger
2 small dates pitted and chopped (soaked if you don’t have a Vitamix)
1/8 tsp Herbamare or salt

Directions:

Place all ingredients in Vitamix or blender and blend until smooth. Taste test and add more ginger, vinegar or salt if desired. Blend again.

Yields 1/2 cup of dressing. Best used within 3 days due to the nature of raw ingredients.

Variations:

You can add a plethora of other ingredients into your protein packed spinach salad such as tomatoes, cucumbers, apple slices, other dried fruits, etc. What really makes this salad filling is the addition of quinoa and chickpeas, so it’s also a great salad to take to work without needing a giant salad container.
