I’m excited to announce that I’ll have a BRAND NEW recipe ebook coming out soon. This one has been a long time in the making, because I was forever adding recipes and expanding the tutorials included in it. My ebook Vegan Comfort Foods From Around The World has ballooned to over 60 new delicious recipes and includes how to cook every low fat vegan side dish from scratch as well.

This is the one recipe book you’re going to want to dive in and start making recipes from right away. I’ve taken classic rich and decadent (and typically unhealthy) comfort foods and stripped the fat and processed ingredients from it and created a delicious and whole foods based version. There is absolutely NO processed fake meat, NO store bought fake vegan cheese or anything like that in these recipes. These dishes are nutritious and focus on calories from whole carbohydrates and lean vegan proteins such as lentils and beans. It’s also extremely gluten free friendly, and most recipes are soy free and nut free as well. There are a few recipes that use tofu (for tofu ricotta “cheese”), but the majority of the recipes are based on vegetables and whole grains and legumes.

Right now we’re just finishing up some final edits for the ebook and it will be available shortly. But I wanted to kick off with a contest!     They all look so beautiful and enticing. I love the colorful ones! I’m drawn to the Yam Black Bean Enchiladas and the Spicy Mexican Black Bean Burgers. I have been a vegan for years due to allergies and food restrictions. I’m bored with current fare and need something new to spice up my eating life. They all look good to me. I want to try them all. It is so difficult to find scrumptious low-fat and gluten-free vegan recipes that make my mouth water.

    Everything looks great . . . makes me hungry looking at the pictures and I just finished dinner! I’d try the Black Bean and Corn Tacos with a side of Rainbow Nachos w/Queso Sauce. Sounds like good eatin’ to me! 🙂

    I am looking forward to trying the Ratatouille and Baked Artichoke Risotto. They both look very delicious!! I have never cooked or prepared artichokes before but I’ve always enjoyed them when I’m out at restaurants. Ratatouille reminds me of the cute, heart-felt movie with the rat in it. I’ve never tried this dish. This book would provide my table a variety in which I love and have always been drawn to.

    The color of the Yam Black Bean Enchiladas got to me, as well as the Ratatouille.
    I wish I were a better cook. My dishes never turn out good enough to photograph. I’m lucky if they are edible.

    Of course everything looks great! But 2 that spring to mind are the meatless sloppy joe; ’cause i haven’t had a sloppy joe since I gave up meat 30 yrs. ago, and yam chickpea spinach curry, as that would give me a reason to use yams, which I’m not too keen on. Still working on the soup book, great stuff there too! Thanks for some great recipes.

    Wow, they all look soooooooo good! The two that really make my mouth water are the Quinoa Veggie Slow Cooker Chili, I’m missing chili, especially now that its getting cold here in Ontario, and the Indian Roasted Eggplant Curry (my husband loves curry). He’s having a hard time giving up meat, but I have a feeling he would love these yummy dishes and wouldn’t miss the meat one bit!

    Veronica! It is so hard to pick just one or two to highlight! Baked Butternut Squash Mac And Cheezy and the Herbed Lentil Loaf are two that I want to try right away. These go back to childhood favorites and I can’t wait to put them back on the menu once again. No doubt there will be many more! Thank you!

    Everything looks amazingly delicious! The first recipes I would try are the Spicy Mexican Black Bean Burgers and the Herbed Lentil Loaf. Although the Yam Chickpea Spinach Curry would be next…I really love spicy food!

    I love portobello mushrooms and any new way of cooking with them is welcome, so I’m really looking forward to the portobello bean burritos. Growing up in the southwest, Mexican is my comfort foods…and then married an Italian and was introduced to fettucini alfredo, so thats also something I’m looking forward to seeing.

    Hard to choose as everything looks so delicious! I’m drawn to the Pulled Jackfruit Carnitas. I love to try new things and Jackfruit is one vegetable I haven’t yet had.
    My second choice would be The Best Cabbage Rolls. Cabbage rolls were my favourite as a kid and I miss them.

    Wow! I’m excited for this cookbook! My boyfriend and I are new vegans (about a month now) and have been scouring the internet for vegan, oil-free recipies – and they aren’t easy to come by. I’m happy to see a cookbook cater to the oil-free vegan way! And my boyfriend is an amazing cook who loves to try new recipies! So…now to pick just two. I picked my two favorite dishes – meatless sloppy joes and fettuchini alfreado with mushrooms and spinach. Growing up I looked forward to the meals when my mom made sloppy joes – and to think there is a vegan version I can enjoy! One of my “go-to” pasta dishes when I went out to eat was anything alfreado. I thought I had lost it forever since I turned vegan, but you have brought alreado back from the dead! Thank you, thank you!! I’m looking forward to trying these recipies out!!

    We can only choose 2?! That’s impossible! Everything looks soooo good! I’m always looking for more ideas for my slow cooker, so of course the Quinoa Slow Cooker Chili makes my list. My family and I really like pasta dishes, so the Baked Ziti And Greens, Deluxe Spinach Mushroom Lasagna definitely make the list. And because I can’t stop at 2 (3), I also would love to try the Mashed Potatoes With Gravy, Rainbow Nachos with Queso Sauce and the Greek Rice.
    To be honest, I want to try them all !! 😀

    Since Yesterday , I have chosen Black Bean And Corn Tacos , without knowing I should choose one of them in order to win Your eBook . So , GREAT !

    I love the Marinated Portobello Bean Burritos too … once I love Burrito . But the Photo Black Bean And Corn Tacos is Wonderful . One can see the Details . Very well done … it induces Appetite !

    So , what a Coincidence !

    Well , all Photos are Great … and the Food ‘ behind ‘ them too ! I love all of them . Very much influenced by Mexico , Greece , Essenes … and some others . They have to do a lot with Native Nutrition Food of some ‘ Spots ‘ on this Planet . Its a Combination of them … Great , Great , Great .

    Actually , all the Recipes are Attractrive to Me … so , it will be to my Husband too , once we have the same Taste and we are both 90 % Vegan and 10 % Vegetarian . And we both enjoy Rustic Cuisine a lot too !

    Being English i notice that your recipes appear to be in an American style and i’d be really keen to experiment with new tastes and different recipes from across the pond, yee hah! I’d particularly like to try the baked butternut squash mac and cheesy and the lasagne as being vegan i miss cheese and find the cheese substitutes not particularly appealing. I would love to try all the recipes and can’t wait until i own a copy!

I am most curious about the Pulled Jackfruit Carnitas as we used to eat a lot of jackfruit when we lived on Sumatra. I have never seen it prepared this way… heading to my local Asian market to find me a jackfruit now!

    Hi Veronica, How can you torture us so with these gorgeous looking pictures and mouth-watering recipes????? If I have to choose two, I’ll go for the Yam and French Lentil Sheperd’s Pie and the Savory Eggplant Fajitas.     How do I pick 2 when they all look so good? Well the Holiday stuffed acorn squash and the Greek rice stuffed peppers are making my mouth water the most so I have to pick them. I have been a vegan for 18 weeks now and feel and look better than I have in 20 years.

    The Photo’s turned out wonderful and everything looks so good!!! It is hard to choose, but I would say that the Easy Cheezy Shells and Broccoli is my first pick as it looks like the real deal and I loved Macaroni and Cheese and do miss it. My second choice would be the Deluxe Spinach Mushroom Lasagna!!! It looks like real lasagna the old way and made me hungry just looking at the picture. Can’t wait to try the recipes!!!

    I would love to have the recipe for the frittata. My mom would make them when guests came over to our home, and it always reminded me of kindness and hospitality. Much more than a comfort food! I have also wanted to make my own black bean burgers, but could never find a good recipe for them. The frozen ones are continually increasing in price which is rough for a girl on a budget!

    Hi:

    As a gluten free vegan with a ton of food sensitivities, the ones that appear to be winners for me are : Yam Chickpea Spinach Curry and the Lentil Loaf.

    I really don’t care for pasta, even if gluten free.

    Oh, those are very nice photos! Picking just one or two; I just can’t! These four are calling me!! But the first two REALLY sound great!
    Cauliflower Potato Tofu Frittata – I ADORE cauliflower! And I LOVE potatoes, I’m Irish after all! So this is just a no brainer!
    Indian Roasted Eggplant Curry (Baingan Bharta) – I buy the boxed Punjab eggplant from Trader Joe’s all the time and so being able to make it myself would be great! Especially since that means I get to go to the farmers market!
    Deluxe Spinach Mushroom Lasagna – I really like veggie lasagnas, especially ones with a bunch of noodles!
    Quinoa Veggie Slow Cooker Chili – winter is coming and a hearty chili is always welcome!
    My favorite comfort food growing up was when my mother made what we called Stone Soup or Kitchen Sink Soup – a leftovers soup with a tomato base. The sad part is, since I’ve been working on being vegan, I just can’t recreate it. The flavor is tied up with chicken stock and I can’t seem to get quite close enough.

    It was hard to narrow it down, but I think since my family buys frozen veggie burgers all the time from the health food store, I would love to learn to make healthier veggie burgers at home. I also really love the idea of the Holiday Stuffed Acorn Squash. My family loves acorn squash, and we are always looking for ways to make the food for our plant-based holidays as beautiful and comforting as before eating a plant-based diet. I also would have to include the Baked Butternut Squash Mac and Cheezy. My son is always wanting mac and cheese. He does like butternut squash, and I love the fact that this recipe does not have fake cheese in it. I think he would love it, and it would be health-promoting as well. All of your recipes look wonderful!

I’m a sucker for Curry’s and love veganizing traditional recipes like Sloppy Joe’s so I have something to make for family members who like to put up a fuss if I’m going to make something “vegan”.

    1. Herbed Lentil Loaf (We recently cut out all meats, and I love meatloaf, so learning ways to prepare good, old-fashioned, tummy-and heart-warming dishes will be delightful!)

    2. Baked Butternut Squash Mac and Cheezy (Ummmm… anything mac and cheezy sounds and looks good, to me! lol)

    The Herbed Lentil loaf looks delicious. Also the Better Than Boston Baked Beans. Actually I would like to try most of them. They all look so good. The meatloaf is something my husband probably would enjoy as he misses meatloaf. I have fond memories of my grandfather making baked beans from scratch but with pork, so a good vegan recipe would be great.

    All these dishes look so delicious is making it very difficult to pinpoint only one or two.
    But I’m going to say that the Spicy Mexican Black Bean Burger is at the top of my list because I’ve been looking for a great vegan burger recipe and because I love mexican food also so I’d love to try it out, and my other choice would be the Ratatouille simply because it’s one of my all time favourites and it’s so easy to make and I would like to try your version of it.

    Wow you have just blown my mind away with all these nice food photos. It is so hard to decide which I love the best because they all look delicious. Well firstly I would love to try and make your Marinated portobello bean Burnitos because I love wraps with any vegan fillings and this looks interesting and tasty. Secondly I woul love to make the Spicy Mexican black bean burgers hich also look very delicious and we like to go camping and this will be most appropriate to make and take with for easy & quick comfort food to make for a friday night. Wow the most enticing ones are the Yam& french lentil sheperd’s pie & the delix spinach mushroom lasagna. I love lentils ans I love spinach,mushrooms & pasta. We have potluck at church every Saturday and I would Like to go and boast with these dishes because the lentils are filling and the lasagna is also a complete dish on its own with the spinach and mushroom fillings.     I am a 75 year old new vegan for health reasons and was delighted to find your blog with its delicious and healthy recipes.
    The two recipes I plan to do next week are the pulled jackfruit carnitas and the chanterelle risotto. I like trying new foods and never had jackfruit and I love anything mushroom.
    Trying foods that are different adds more challenge to the process of learning vegan cooking, which makes it more enjoyable.

    Indian Roasted Eggplant Curry — One of my favorite Indian dishes. It would be so cool to be able to make a healthy vegan version at home.
    Herbed Lentil Loaf — I used to be able to purchase a frozen version from my local health food store but they have not carried it for years. It was one of my husband’s favorite vegetarian foods and he loved for me to serve it at holiday meals (He’s not a vegetarian). I’m so excited to think I could serve it to him again.

    Fettuccini Alfredo with Mushrooms and spinach – Because I love pasta
    Spicy Mexican Black Bean Burgers – I miss burgers so much, I am new to plant based whole food. I recently watched Forks over Knives and it really opened my eyes. Being someone who has always been taught you need Meat, veg and starch on your plate I have always eaten meat at almost every meal. I started running and working out last year and lost 50lbs. The thing that scared me the most is the fact that under the belief that muscles need meat protein I was taking in almost 400g a day in animal protein. I have been animal protein free for two 18 days now and trying to set a great example for my kids. The hardest part is keeping things interesting and I think your book would make a wonderful addition to our kitchen.

    These all look delicious! My first instinct is to say absolutely all of them. If made to choose, I would go for the curries–your yam, eggplant, spinach curry and eggplant curry look lovely. I grew up in Costa Rica and am happy to see that our rice and beans or “gallo pinto” made the list! This was definitely a comfort food growing up, as were my all-time favourites: black bean soup and Mexican tortilla soup.

    I never ever enter competitions, so I don’t want to enter this one. But I must congratulate you on the excellent masterpiece you have created, and I want to buy your book as soon as it is available. Hence the reason I have given you my email address.
    I have found that most American cook books have ingredients that we in Australia do not have access to, or have names that we have never heard of, but as a Scotsman living in Australia the recipe for Mashed Potatoes and Gravy caught my fancy as it is or was a staple food in Scotland when I was living there many years ago.
    I wish you luck with your book, you deserve it after all the hard work you must have put into it.

    You’ve covered all my favorites!

    The only other recipe I wish for is European cabbage rolls cooked in a sour
    tomato sauce. My mother used to cook these and I can’t figure out a way
    to make them without textured protein.
    I’d bless you forever if you could come up with that one!

    Btw, I too vote for your opening restaurants. As people discover how delicious
    vegan food can be, they will convert to healthier eating.

    All dishes look really mouthwatering …

    If I really would have to choose I would pick these 2 (because I am not able to just pick 1 out of all these lovely dishes)

    1) Easy Cheezy Shells And Broccoli (sounds like an absolute yummie dish)

    2) Herbed lentil loaf (very nice dish for a loaf and lentils are so healthy)

    Mashed potatoes with gravy and pulled Jackfruit carnitas. I can’t even imagine the Jackfruit one. Looking forward to this book.

    The book looks amazing…loving the pictures. I would love to try the Baked Butternut Squash Mac & Cheese. This is a dish I miss alot and I do not like to use “fake cheese”. The second recipe I would like to try is Mashed Potatoes w/gravy. This is my ultimate comfort food and I am always trying new recipes to find the best dish. I think this could be it. If I tried the mashed potatoes, I would have to make the meatloaf to accompany it…the list would go on and on.

    Herb Lentil Loaf is what has attracted me. Lentil dishes are very tasty but in my country are not much popularized even among those who prefer vegetable-ans-fruit based diet. Its picture is very eye-catching.

    Hi…the pictures are great…don’t like to buy a cookbook without pictures 🙂 I am most excited to try the Black Bean and Corn Tacos and the Rainbow Nachos with Queso Sauce. I have really missed tacos and nachos and cheese. I would also like to try the Easy Cheesy Shells and Broccoli…looks yummy. Thank you.

    I’d like to try the Baked Butternut Squash Mac And Cheezy (no fake cheese) — because there’s no fake cheese! and I think I can wow my boyfriend with it.

    And, the Best Cabbage Rolls — you read my mind … I have been looking for something like this .. also for my bf who’s mom used to make these with meat and this will give him pleasant memories.

    It’s hard to pick only two…I’ll say the Quinoa Slow Cooker Chili since I like quinoa and slow cooking, and Yam with Black Bean Enchiladas because I’ve never had anything like that and it sounds interesting.

    The Saucy Eggplant Fajitas and the Better Than Boston Baked Beans would be my picks. I especially want to try the beans. I am from the Boston area and always used to make my beans with salt pork, which gives them a wonderful sweet taste. Now that we no longer eat meat, I have been looking for a really good recipe as we love beans.

    Everything looks amazing!!!! Indian Roasted Eggplant Curry (Baingan Bharta) & Holiday Stuffed Acorn Squash are definately the first two I would try. Especially the squash since its fall and the squash are fantastic right now.

    Meatless Sloppy Joe’s and the Costa Rican Rice and Beans (Gallo Pinto). Hopefully it is as good as it is in Costa Rica as I had it for breakfast most days there.

    They all look amazing! Rissoto’s, both the Chanterelle and the Artichoke ones look sooooo good! I have missed rissoto since becoming vegan, as most recipes call for cheese and it just doesn’t seem the same without it (and of course they typically start with butter as well). The Indian Eggplant Curry looks very good too, wish I had the recipe tonight! I love Indian food and Eggplant is one of my favorite vegetables!

    I am typically very cautious in purchasing vegan cookbooks or going to vegan restaurants, as I do not like fake meat. I don’t understand the point of it! I focus on whole grains, fruits and vegetables and your cookbook sounds perfect! Can’t wait to get my hands on it!

    Herbed Lentil Loaf.
    I’ve already made a dish like that and it tasted very well.
    It’s a really complete meal: lentils+cereals+vegetables and it’s cake-like and I love cakes’ textures.

    It’s hard to pick 1-2 so I picked 4! Rainbow Nachos just look so fresh I’d like have them now for breakfast. I love stuffed peppers so the Greek Rice recipe would be a ‘have to try’. I used to eat the Bush’s Veggie Baked beans but always drained away the sugary sauce. I’m sure your recipe for the Better than Baked Beans would have a luscious yet healthy sauce. Lastly, the Yam & Black Bean Enchiladas look like a winner. I can’t eat mushrooms so anything with them as a primary ingredient is off my list of useful recipes (unless something can be successfully substituted). I have your Soups book & everything I’ve tried has been really good. Thanks for the website & tips!

    Have never eaten Jackfruit and am interested in trying new things.
    And, oh, how could anyone go wrong eating mashed potatoes and gravy ?
    I have only recently changed my way of eating and am loving being vegan.

    I can’t wait to try the Costa Rican Rice and Beans, Yam And French Lentil Shepherd’s Pie…. and (I know you said 2 but being honest I had a 3-way tie) Cauliflower Potato Tofu Frittata <— because I can picture having a girl's day brunch and would love to try to make it Vegan.

    Also I am on the verge of trying to get my mom to first eat healthy but then eventually go Vegan.

    Lastly, I am in the process of trying to enroll in a Nutrition degree program, I would love to be able to take your book with me to the cooking classes to show more options and maybe get the chef to include your book as an alternative. If you have pictures for most recipes like you have above your book will be on point!!

    Everything looks so delicious … I can just imagine curling up in front of the fireplace with a big bowl of the Mashed Potatoes with Gravy! Wow, talk about comfort food!!
    Recently, I have become very fond of eggplant and am always on the lookout for new recipes: I would love to try the Saucy Eggplant Fajitas and the Indian Roasted Eggplant Curry.

    All these dishes look so delicious! Really difficult to choose just two, to go into your competition…but after serious consideration of both the photos and the foods I love (or used to really love), I have nominated (in no particular order;):

    1) Mashed Potatoes With Gravy
    Mashed potatoes was probably my all-time favourite comfort food growing up. Ours was always made with lots of milk, butter and a raw egg cracked in. Clearly, I would never consider making it that way now – but yours here, looks so delicious and I know it would have only healthy ingredients. Am really intrigued to try it.

    2) Pulled Jackfruit Carnitas (faux pulled pork)
    Jackfruit is pretty high up on my list of favourite foods now (along with durian) – when I can get it ripe, I eat it several times a week. The fact that you’ve made a dish using jackfruit as a faux-pork substitute (wow!) is ingenious – and I can’t wait to see how that turns out!

    Other honourable mentions that all look too dreamy and comforting to ignore;):
    Deluxe Spinach Mushroom Lasagne
    Cauliflower Potato Tofu Frittata
    Baked Butternut Squash Mac and Cheezy
    Baked Artichoke Risotto

    Veronica, all the vegan restaurants I know rely almost exclusively on mock meats/textured soy protein (with the occasional tofu dish). I read on the inside cover of the menu at one well-meaning global vegan chain restaurant that textured soy protein is nourishing and healthy. Seriously…

    So I’ve been thinking…what you need to do is open your own vegan restaurant – then, as soon as possible, open a whole chain of them in every city in every country around the world. That way, my friend and I will actually have somewhere to eat healthy, delicious, cooked and raw, vegan food as a once a week treat. Hop to it, now!;) (And you know I’m only half-kidding here, yeah?…)

    Ooooh! Love that every recipe has pictures and that you focus on whole, low fat foods. And able to be gluten free! Sounds awesome. The baked ziti looks great and I would love to cook it for my husband as he loves pasta!
