I’ve taken classic rich and decadent (and typically unhealthy) comfort foods and stripped the fat and processed ingredients from it and created a delicious and whole foods based version. There is absolutely NO processed fake meat, NO store bought fake vegan cheese or anything like that in these recipes. These dishes are nutritious and focus on calories from whole carbohydrates and lean vegan proteins such as lentils and beans. It’s also extremely gluten free friendly, and most recipes are soy free and nut free as well. There are a few recipes that use tofu (for tofu ricotta “cheese”), but the majority of the recipes are based on vegetables and whole grains and legumes.

I have been a vegan for years due to allergies and food restrictions. I’m bored with current fare and need something new to spice up my eating life. They all look good to me. I want to try them all. I am looking forward to trying the Ratatouille and Baked Artichoke Risotto. They both look very delicious!! I have never cooked or prepared artichokes before but I’ve always enjoyed them when I’m out at restaurants. Ratatouille reminds me of the cute, heart-felt movie with the rat in it. Wow, they all look soooooooo good! The two that really make my mouth water are the Quinoa Veggie Slow Cooker Chili, I’m missing chili, especially now that its getting cold here in Ontario, and the Indian Roasted Eggplant Curry (my husband loves curry). Wow! I’m excited for this cookbook! My boyfriend and I are new vegans (about a month now) and have been scouring the internet for vegan, oil-free recipies – and they aren’t easy to come by. I’m happy to see a cookbook cater to the oil-free vegan way! And my boyfriend is an amazing cook who loves to try new recipies! So…now to pick just two. I picked my two favorite dishes – meatless sloppy joes and fettuchini alfreado with mushrooms and spinach. Growing up I looked forward to the meals when my mom made sloppy joes – and to think there is a vegan version I can enjoy! One of my “go-to” pasta dishes when I went out to eat was anything alfreado. I thought I had lost it forever since I turned vegan, but you have brought alreado back from the dead! Thank you, thank you!! I’m looking forward to trying these recipies out!!

We can only choose 2?! That’s impossible! Everything looks soooo good! I’m always looking for more ideas for my slow cooker, so of course the Quinoa Slow Cooker Chili makes my list. My family and I really like pasta dishes, so the Baked Ziti And Greens, Deluxe Spinach Mushroom Lasagna definitely make the list. And because I can’t stop at 2 (3), I also would love to try the Mashed Potatoes With Gravy, Rainbow Nachos with Queso Sauce and the Greek Rice.

I would love to have the recipe for the frittata. My mom would make them when guests came over to our home, and it always reminded me of kindness and hospitality. Much more than a comfort food! Oh, those are very nice photos! Picking just one or two; I just can’t! These four are calling me!! But the first two REALLY sound great!
Cauliflower Potato Tofu Frittata – I ADORE cauliflower! And I LOVE potatoes, I’m Irish after all! So this is just a no brainer!
Indian Roasted Eggplant Curry (Baingan Bharta) – I buy the boxed Punjab eggplant from Trader Joe’s all the time and so being able to make it myself would be great! Especially since that means I get to go to the farmers market!
Deluxe Spinach Mushroom Lasagna – I really like veggie lasagnas, especially ones with a bunch of noodles!
Quinoa Veggie Slow Cooker Chili – winter is coming and a hearty chili is always welcome!
My favorite comfort food growing up was when my mother made what we called Stone Soup or Kitchen Sink Soup – a leftovers soup with a tomato base. The sad part is, since I’ve been working on being vegan, I just can’t recreate it. The flavor is tied up with chicken stock and I can’t seem to get quite close enough.

It was hard to narrow it down, but I think since my family buys frozen veggie burgers all the time from the health food store, I would love to learn to make healthier veggie burgers at home. I also really love the idea of the Holiday Stuffed Acorn Squash. My family loves acorn squash, and we are always looking for ways to make the food for our plant-based holidays as beautiful and comforting as before eating a plant-based diet. I also would have to include the Baked Butternut Squash Mac and Cheezy. My son is always wanting mac and cheese. He does like butternut squash, and I love the fact that this recipe does not have fake cheese in it. I think he would love it, and it would be health-promoting as well. Herbed Lentil Loaf — I used to be able to purchase a frozen version from my local health food store but they have not carried it for years. It was one of my husband’s favorite vegetarian foods and he loved for me to serve it at holiday meals (He’s not a vegetarian). I’m so excited to think I could serve it to him again.

Spicy Mexican Black Bean Burgers – I miss burgers so much, I am new to plant based whole food. I recently watched Forks over Knives and it really opened my eyes. Being someone who has always been taught you need Meat, veg and starch on your plate I have always eaten meat at almost every meal. I started running and working out last year and lost 50lbs. The thing that scared me the most is the fact that under the belief that muscles need meat protein I was taking in almost 400g a day in animal protein. I have been animal protein free for two 18 days now and trying to set a great example for my kids. The hardest part is keeping things interesting and I think your book would make a wonderful addition to our kitchen.

These all look delicious! My first instinct is to say absolutely all of them. If made to choose, I would go for the curries–your yam, eggplant, spinach curry and eggplant curry look lovely. I grew up in Costa Rica and am happy to see that our rice and beans or “gallo pinto” made the list! This was definitely a comfort food growing up, as were my all-time favourites: black bean soup and Mexican tortilla soup.

I never ever enter competitions, so I don’t want to enter this one. But I must congratulate you on the excellent masterpiece you have created, and I want to buy your book as soon as it is available. Hence the reason I have given you my email address.
I have found that most American cook books have ingredients that we in Australia do not have access to, or have names that we have never heard of, but as a Scotsman living in Australia the recipe for Mashed Potatoes and Gravy caught my fancy as it is or was a staple food in Scotland when I was living there many years ago.
I wish you luck with your book, you deserve it after all the hard work you must have put into it.

They all look amazing! Rissoto’s, both the Chanterelle and the Artichoke ones look sooooo good! I have missed rissoto since becoming vegan, as most recipes call for cheese and it just doesn’t seem the same without it (and of course they typically start with butter as well). The Indian Eggplant Curry looks very good too, wish I had the recipe tonight! I love Indian food and Eggplant is one of my favorite vegetables!
I am typically very cautious in purchasing vegan cookbooks or going to vegan restaurants, as I do not like fake meat. I don’t understand the point of it! I focus on whole grains, fruits and vegetables and your cookbook sounds perfect! Can’t wait to get my hands on it!

It’s hard to pick 1-2 so I picked 4! Rainbow Nachos just look so fresh I’d like have them now for breakfast. I love stuffed peppers so the Greek Rice recipe would be a ‘have to try’. I used to eat the Bush’s Veggie Baked beans but always drained away the sugary sauce. I’m sure your recipe for the Better than Baked Beans would have a luscious yet healthy sauce. Lastly, the Yam & Black Bean Enchiladas look like a winner. I can’t eat mushrooms so anything with them as a primary ingredient is off my list of useful recipes (unless something can be successfully substituted). Lastly, I am in the process of trying to enroll in a Nutrition degree program, I would love to be able to take your book with me to the cooking classes to show more options and maybe get the chef to include your book as an alternative. All these dishes look so delicious! Really difficult to choose just two, to go into your competition…but after serious consideration of both the photos and the foods I love (or used to really love), I have nominated (in no particular order;):
1) Mashed Potatoes With Gravy
Mashed potatoes was probably my all-time favourite comfort food growing up. Ours was always made with lots of milk, butter and a raw egg cracked in. Clearly, I would never consider making it that way now – but yours here, looks so delicious and I know it would have only healthy ingredients. Am really intrigued to try it.
2) Pulled Jackfruit Carnitas (faux pulled pork)
Jackfruit is pretty high up on my list of favourite foods now (along with durian) – when I can get it ripe, I eat it several times a week. The fact that you’ve made a dish using jackfruit as a faux-pork substitute (wow!) is ingenious – and I can’t wait to see how that turns out!

Veronica, all the vegan restaurants I know rely almost exclusively on mock meats/textured soy protein (with the occasional tofu dish). I read on the inside cover of the menu at one well-meaning global vegan chain restaurant that textured soy protein is nourishing and healthy. Seriously…
So I’ve been thinking…what you need to do is open your own vegan restaurant – then, as soon as possible, open a whole chain of them in every city in every country around the world. That way, my friend and I will actually have somewhere to eat healthy, delicious, cooked and raw, vegan food as a once a week treat. Hop to it, now!;) (And you know I’m only half-kidding here, yeah?…)
